The Key Principles of Sustainable Packaging Every Restaurant Business Should Know

Packaging is one of the most visible parts of any brand's environmental footprint. Whether it leaves your kitchen as a takeaway box or sits behind your counter as a paper bag, your guests see it before they see anything else. For restaurant chains across the EU, that visibility is becoming a regulatory test and a commercial one at the same time. The five principles below give you a quick lens for checking what "sustainable packaging" really means for your business — and for the paper bags, meal boxes and cups that carry your brand out the door.

What does "sustainable packaging" actually mean?

In simple terms, sustainable packaging reduces environmental impact across its entire lifecycle, from how the material is sourced to what happens after the customer throws it away. For foodservice, that means looking past the takeaway box itself and asking how it was made, how it gets reused or recycled, and where it ends up once your guest is done with their meal.

The pressure to answer those questions is rising on three fronts at once.

-       The EU's Packaging and Packaging Waste Regulation enters application on 12 August 2026, setting binding rules on recyclability, recycled content, reuse and minimisation for every pack placed on the EU market (source).

-       The OECD projects global plastics production will jump by 70% between 2020 and 2040, climbing from 435 to 736 million tonnes if policy doesn't shift (source).

-       And your guests are paying attention — recent consumer research found that 82% of buyers across age groups say they would pay more for products in sustainable packaging (source).

These principles apply whether you run a quick-service chain, a casual dining group or a delivery-first concept. The materials, formats and end-of-life routes change with the menu, but the test is the same: does the pack pull its weight across the whole lifecycle, or only on the part your guest sees?

Principle 1 — It reduces environmental impact

The first principle is the simplest: choose materials and formats that put less pressure on the planet. For foodservice, that usually means moving away from fossil-based plastics towards fibre-based options — paper bags, kraft boxes, moulded pulp trays and paper cups — sourced from responsibly managed forests. Fibre packaging from well-managed forests helps reduce reliance on fossil fuels and lowers carbon emissions across the supply chain.

The same thinking extends to inks, coatings and linings. Water-based inks, plant-based coatings and PFAS-free greaseproof papers all keep the footprint of a single takeaway bag or burger box meaningfully lower than its conventional equivalent — and they side-step a growing list of EU restrictions on chemicals in food-contact packaging.

Principle 2 — It minimises waste

The cleanest waste is the waste you never create. Source reduction — fewer layers, lighter board, no decorative inserts, no double walls — is the single biggest lever most foodservice operators have. A paper bag that does the job in 70 grams instead of 90 saves material at every stage of the supply chain and leaves less for your customer to throw away.

Recycled content closes the loop on what's already in circulation. Recycled kraft paper and board can match the strength and look of virgin fibre at a fraction of the upstream footprint. 

For greasy or food-soiled formats — burger wraps, chip cartons, salad bowls — composting is often more realistic than recycling, because the food residue contaminates the paper stream.  

The honest test is whether your guests can actually compost the pack at home or whether your local authority collects food-soiled fibre for industrial composting.

Consumers reward operators that get this right. The same research found that 71% of buyers had actively chosen a product in the previous six months because of the sustainability of its packaging (source). For a restaurant chain, that's the difference between a takeaway bag your guest tosses without a thought and one they photograph for social media.

Principle 3 — It considers the entire lifecycle

Sustainable packaging isn't one decision — it's a chain of them. A pack that scores well on sourcing but fails on end-of-life isn't really sustainable; it just looks the part. The lifecycle test runs across four checkpoints:

·       Sourcing. Where does the raw material come from? Responsibly managed forests for paper and board, recycled streams for kraft, audited supply chains for everything else.

·       Production. How is the pack made? Energy mix at the mill and the converter, water consumption, off-cuts captured and reused rather than landfilled.

·       Design. Does the pack work hard for its weight? Right-sized to the food, easy to fold flat, ideally made from a single material so the recycling stream stays clean.

·       End-of-life. What happens after your guest is done? Recyclable, compostable or reusable — but only if the local collection route actually exists where your customer eats.

That last point is where most well-meaning packaging programmes fall apart. A bowl labelled "home compostable" only counts if your guests can actually compost it at home, and a recyclable cup only counts if local kerbside collection accepts it. The lifecycle frame keeps you honest across all four steps.

Principle 4 — It reduces material use

The fourth principle pushes the design brief one step further: not just lighter materials, but less packaging, full stop. Right-sized boxes, paper bags that mould to the order, fewer layers between the food and the guest. The aim is a pack that does its job — protect the food, hold the heat, carry the brand — using the minimum material to get there.

This is now a regulatory requirement, not just good practice. Under Article 24 of the EU's Packaging and Packaging Waste Regulation, the rules split by pack type.

-       For sales packaging — the meal boxes, cups and paper bags you hand directly to your guest — operators have to reduce empty space to the minimum necessary for product protection by 12 February 2028.

-       For grouped, transport and e-commerce packaging — the cases that move stock between your central kitchen and your sites, and the boxes your delivery riders carry — the empty-space ratio cannot exceed 50% from 1 January 2030 (source). Filler material like air cushions, bubble wrap and paper shreds counts as empty space, so swapping plastic dunnage for paper dunnage does not solve the problem — only smaller, better-fitting packaging does.

There's an upside on top of the compliance one. Smaller, lighter packs cost less to manufacture and ship, take up less room in the stockroom, and cut the dunnage bill at every step in between. Operators who get ahead of the 2028 deadline tend to find the project pays for itself before the rules even bite.

Principle 5 — It's made sustainably

The fifth principle is about how packaging is made, not just what it's made from. Even fibre-based, right-sized, fully recyclable packaging can carry a heavy footprint if it's manufactured with fossil energy in a wasteful plant. Sustainable packaging is made in facilities that take their own operations seriously.

That shows up in practical ways. Mills and converters powered by renewable electricity. Water recycled within the production loop instead of run to drain. Manufacturing offcuts fed back into the next batch rather than landfilled. The best operators close the loop inside their own factory before they ever talk about closing it at the consumer end.

Certifications are the easiest way to verify it. FSC chain-of-custody covers responsible sourcing through to the converter. ISO 14001 covers environmental management systems at the manufacturing site. Together they give a procurement team something concrete to point at when a guest, an investor or a regulator asks — not a claim on a website, but an audited standard.

A quick self-check for your business

Pull up your current packaging list and run it past these five questions. If you can answer yes to all of them, you're in good shape. If you stumble on one or two, that's where to start.

·       Sourcing. Is your fibre packaging FSC-certified, or sourced from a verified recycled stream you can trace back to the mill?

·       Right-sizing. Does each pack actually fit the order, or are you shipping fresh air inside oversized boxes and bags?

·       End-of-life. Can your guest realistically recycle or compost the pack where they finish their meal, given the bins and infrastructure they actually have?

·       Recycled content. How much of your board, paper or moulded pulp is post-consumer recycled material, and is that share rising year on year?

·       Supplier credentials. Can your supplier point to FSC chain-of-custody and ISO 14001 certificates, or are the green claims sitting on a marketing page alone?

The way forward

The five principles aren't a checklist you tick once and forget. They're a way of looking at every pack that crosses your business — every burger box, every paper bag, every transport case. The operators who get ahead of the 2026 and 2028 PPWR deadlines won't be the ones who swapped a single product line at the last minute; they'll be the ones who built these principles into how their procurement team thinks.
